Couteaux Corses® models — available soon
Couteaux Corses® opens a new chapter in its history with its own models of Corsican knives.
Thought out from the experience gained since 2011 through contact with artisanal Corsican cutlery, they return to what has always guided our selection: simplicity, robustness, usability, balance, material quality, and identity.
The first two models will be:
U PAISANU
Robust. Rural. Utilitarian.
U SIMPLICE
Sober. Effective. Unpretentious.
The Couteaux Corses® models are designed and signed by the brand, made in Corsica, and stamped with the Couteaux Corses® hallmark.
The first Couteaux Corses® models will soon be available on the site and in the shop in Corte.
Each knife will remain a unique piece. A sold piece will never be reproduced.
The Couteaux Corses® models will come with a lifetime warranty and can return once a year to the workshop for a complete and free revision.
The knives of our partner artisans
Couteaux Corses® continues its work with partner Corsican cutlers, whose creations complement the brand's own models.
The selection may bring together various expressions of the Corsican knife: Curnicciolu, friction folding Corsican knife, piémontais, liner lock, fixed knives, stilettos, or contemporary creations.
These names do not all cover the same thing. Some refer to a traditional shape, others to a mounting principle or a locking system. Each sheet will therefore clearly specify the type of knife, its assembly, its steel, its materials, and its dimensions.
Among these artisans, Manu Padovani holds a special place: a historical partner of Couteaux Corses®, he remains officially distributed by the brand.
The other partner artisans may evolve over time, depending on the available pieces and ongoing collaborations.
A selection that evolves with the available pieces
The selection offered on Couteaux-Corses.fr evolves with the pace of artisanal production and the pieces that are actually available.
The arrivals are neither standardized nor regular: each knife is added to the site when it is actually available for sale.
This way of functioning allows us to present only real pieces, with their own characteristics, without artificially creating a novelty calendar.

The Curnichjiolu or Curnicciolu, knife known as the "Corsican shepherd's knife"
The Curnichjiolu or Curnicciolu belongs to the most well-known forms of the traditional Corsican knife.
Historically associated with rural and everyday uses, it remains an important reference in artisanal Corsican cutlery today.
But Corsican cutlery does not stop at the Curnichjiolu.
Folding knives, fixed blades, styluses, table knives, and contemporary creations testify to a vibrant cutlery, capable of preserving its identity without becoming stagnant.

How to recognize a real Corsican knife?
To choose an authentic Corsican knife, check its place of manufacture, the identity of the master cutler, and the specific characteristics of the piece. A name or decoration evoking Corsica is not enough to document its origin.
All the knives sold by Couteaux Corses® are unique handcrafted pieces, made in Corsica by local cutlers.
Each knife comes with a certificate of authenticity. The cutler's signature on the blade allows for the identification of its creator.
Our cutlers master the various stages of artisanal manufacturing: assembly, adjustment, sawing, shaping, guilloching, and polishing, according to the characteristics specific to each creation.
Our knives are guaranteed for life, under the applicable warranty conditions, notably excluding damage related to inappropriate use or maintenance, such as washing in a dishwasher.
Couteaux Corses® also ensures follow-up on the items sold, in relation to the concerned cutlers.

Folding Corsican knife or fixed knife?
The folding Corsican knife holds an important place in the island's artisanal cutlery. Practical to carry and designed for many everyday uses, it is distinguished by the shape of its blade, the materials of its handle, and its assembly system.
From the traditional Curnicciolu to contemporary creations, folding Corsican knives feature different designs: nail or capuchin mounting, friction system, Piedmontese or locking mechanism. These techniques are not equivalent and each product sheet specifies the characteristics of the knife presented.
The choice of an artisanal folding Corsican knife depends notably on the length of its blade, its dimensions when closed and opened, its steel, the material of its handle, and the intended use.
The fixed blade Corsican knife meets other needs. Its dimensions, geometry, and construction also determine its potential uses.
At Couteaux Corses®, each piece is individually photographed and accompanied by its technical characteristics to enable an informed choice.
Carbon steel, damask or stainless steel?
Carbon steel
Appreciated in cutlery for its cutting qualities and behavior in use. It naturally develops a patina and requires proper maintenance.
Damask steel
Its patterns strongly contribute to the visual identity of the blade and that of each piece.
Stainless steel
Its increased resistance to corrosion facilitates daily maintenance.
When the exact grade is known, notably 14C28, it is specified on the knife's sheet.
Couteaux Corses® and Corsican cutlery
Since 2011, Couteaux Corses® has dedicated its activity to artisanal Corsican knives and Corsican cutlery.
Our work consists of selecting, presenting, documenting, and marketing pieces made in Corsica while allowing the visitor to understand what they are really purchasing:
the artisan or model, the steel, the materials, the dimensions, the assembly, the finishes, and the specific qualities of each knife.
Today, Couteaux Corses® is evolving.
The selection will now rely on two complementary axes:
models specific to Couteaux Corses®
and
the creations of partner Corsican cutlers.
The presentation of the site is changing.
Our concept of the Corsican knife remains the same.
ESSE NOI, ÊTRE-NOUS-MÊMES.
Member of the Corsican cutlers' union FPCC
Couteaux Corses® is a member of the Corsican cutlers' union FPCC.
This membership is part of the history and positioning of Couteaux Corses® and will remain clearly visible in the new version of the site.
History and know-how of Corsican cutlery
Couteaux-Corses.fr is not just an online shop.
The site has been bringing together for many years a range of content dedicated to the history, uses, and techniques of the Corsican knife:
History of the Corsican knife — Curnicciolu — Corsican stiletto — Nail mounting — Maintenance — Glossary of Corsican cutlery.
This content will be preserved, reorganized, enriched, and progressively better documented.
Unique pieces, guaranteed and monitored
On Couteaux-Corses.fr, each knife offered is a unique piece.
A sold piece is never reproduced.
Each listing presents the knife actually for sale and specifies:
artisan or model, type, steel, material of the handle, dimensions, weight, assembly, manufacturing, and particularities of the piece.
The guarantee and monitoring conditions are specified according to the knife concerned.
For Couteaux Corses® models, the guarantee is for life and a complete and free revision can be done once a year.
Our Corsican cutlery artisans passionate about Tradition, "Know-How" and the Contemporary.
Our current (or future) cutlers are (will be) all Corsican cutlery artisans working in the purest island tradition. They are not only guardians of traditional Know-How but also bring a renewal to Corsican cutlery stemming from their creative force. Without questioning the foundations of Corsican cutlery, they innovate by creating contemporary Corsican knives that respect quality and artisanal authenticity while modifying certain "base" models like the curnicciolu, the piémontais, or the aschese.... Whether they forge or shape their knives according to their desires, our cutlers always work with the strength and love that led them to embrace this artisanal trade. Only working with unique pieces by definition, our cutlers pay special attention to each of their pieces and guarantee them for life. Forged or shaped, the Corsican knives marketed by the registered brand Couteaux Corses® are not only guaranteed by their creators but also by the brand. Couteaux Corses® selects only cutlery artisans who meet an ethical "specifications" ensuring enthusiasts of Corsican knives the authenticity of the pieces as being the work of an island cutlery artisan. A cutlery artisan who must follow up on each piece and intervene on each one if necessary to repair or replace it as a last resort.
Let us remember that by definition a cutler is: "A person whose trade is to manufacture, repair, occasionally sell, knives, scissors, razors, penknives" and that as such he must master all the stages and processes of manufacturing....
Couteaux Corses® is proud to offer a diversity in the Corsican knives it markets. Indeed, this diversity demonstrates both the good health of the Corsican knife and the island cutlery artisans, their strong potential for creativity and evolution. A controlled, mastered evolution, based on culture and tradition brings one of the pillars of our craft towards a necessary "contemporaneity" so as not to freeze Corsican cutlery in a mortuary shroud despite being beautifully embroidered.... Corsican cutlers are not "art copyists" destined to create "replacement pieces" for museums during the renovation of originals; they are naturally led to evolve their creations and their design by conceiving them for a present and a future that we hope will be prosperous while adding the strong added values of the Emotional, Historical, and Cultural references that have made them who they are.
Couteaux Corses® commits to neither marketing nor promoting any "Chinese" or "Pakistani" products in the name of respect and love for the Corsican knife and our Ancestors
A charter to combat counterfeits and fake artisanal Corsican knives, or Chinese curnicciolu ...
If the Corsican Cutlers' Union implements a quality charter for the Corsican knife, it is to combat counterfeiting and fake artisanal Corsican knives. One must commend this approach. But the real question is: "What about Corsican cutlers who decide not to join the Corsican Cutlers' Union?" Well, the answer is quite simple: they will continue to work artisanally on their Corsican knives to satisfy the requirements of enthusiasts of these same Corsican knives as they have done until now. In fact, joining the Corsican Cutlers' Union is not obligatory for island cutlers. Some island cutlers may decide not to unionize to maintain total freedom in creation and not to submit to specifications they may find too constraining or too restrictive in relation to their idea of creation in the field of cutlery... Today, it is clear that the artisanal quality of island cutlery is no longer in question and is a guarantee of seriousness and authenticity. All Corsican cutlers provide quality work and their Corsican knives are generally guaranteed for life with the follow-up and service that should accompany a noble product derived from craftsmanship and tradition. The Corsican knife is diverse and varied as a whole and always has been... Some micro-regions of the island even have models that are unique to them, such as the Aschese or u Giuncianincu... The true artisanal Corsican knife will always be recognized by the enthusiast of Corsican cutlery who will never confuse a souvenir knife (regardless of its price) with a genuine artisanal Corsican knife! Let us wager that artisanal Corsican cutlery committed to a quality and tradition approach will be able to confront the centuries-old invasion of Thiers, Chinese or Pakistani competition... To conclude, returning to the question "What about Corsican cutlers who decide not to join the Corsican Cutlers' Union?" the answer may be found in the Federation of Professionals of Corsican Cutlery that was born in August 2019 and of which we are members!!!
